Baked Spaghetti and a Great Visit with Paul & Mary aka Boris & Natasha…

We had a visit from Paul & Mary this afternoon! It sure was great seeing them again. We had a nice visit and I called Arlene, Dortha & Mark and Donna Nolan to let them know that they were here. Nolan & Donna weren’t home but Arlene and Mark & Dortha stopped by to meet them. They have chatted online with Mary but had not met her in person so this was fun..We actually met them last fall in Kansas City for lunch and then later spent a long weekend parked with them in our RV in Merriam, KS.

Today was my day to try to duplicate the recipe for the Spazagne(Baked Spaghetti) the you can order at Cheddar’s. I gathered all my ingredients hoping that I would at least get it to taste something like Cheddar’s…lol

Well, it actually turned out pretty tasty. I have been asked for the recipe and anyone that knows me, knows that usually the recipe is in my head. So I will try to tell you what I used and how much.

This recipe will make a 9 x 13 casserole dish full.

1/2lb cooked and drained ground beef—set aside for later

approx. 1-lb cooked and drained spaghetti—set aside in strainer

In large bowl mix together:

2 eggs whisked

1/3 c Cream

1/3 –1/2 container of Ricotta Cheese(15oz container)

1 bag- Kraft Italian Blend Shredded Cheese

1/2 container of DiGiorno Parmesan, Romano, & Asiago Cheese Blend—this comes in a small plastic container with lid.

Mix well….

Add the drained Spaghetti and mix until coated with the mixture.

Spray the 9 x 13 casserole dish very well. Press spaghetti into pan.

Top the spaghetti in this order:

1 large can of sliced mushrooms(optional)

1/2 bag of Kraft Italian Blend Shredded Cheese

1/2 lb cooked ground beef

1 jar of Spaghetti Sauce or Marinara Sauce—I used Spaghetti Sauce

Top with some of the DiGiorno Parmesan, Romano, & Asiago Cheese

Last, add the remaining 1/2 bag of the Kraft Italian Blend Shredded Cheese.

Bake uncovered at 350* for about 35 - 45 minutes. Watch so it doesn’t burn. I cooked mine too long in the Convection Oven and the top got pretty dark. Cut into squares and serve with a nice Salad(with Olive Garden Dressing!!) and French bread.

Does look very good! Hey, we are thinking of heading over to Rockport around the 1st of March....are their going to be some more "dreamers" in that neck of the woods then?
